Our Dash Mini Waffle Maker was purchased at Target eons ago. The tiny grill oven was totally forgotten until we found it while cleaning out the kitchen before Christmas. My parents agreed it looked cute, but the only person in the family interested in giving it a chance was me.

Friday morning I took out a box of Trader Joe’s Gluten Free Buttermilk Pancake & Waffle Mix. I followed the directions for the most part, but used less butter (2tbsp > 1tbsp). As I was about to pour the mixed batter onto the Mini Waffle Maker, my dad jumped in.

He noticed that there were still medium-sized chunks of butter in the batter and adamantly insisted that I stir more. I did my best, but my weak arms got tired quickly. Having to look down for so long also was tough on my weak neck. Thankfully my dad helped stir some as well. Between the two of us, we spent over 20 additional minutes stirring. It sure was grueling work, but curiosity helped me push through.

The waffles came out nicely. With 3/4 cup of mix, I was able to churn out six waffles. I used organic grape jelly as a topping on most of them; on one, I tried peanut butter. (The grape jelly tasted better.) Preparing the batter was tough enough that waffles probably won’t be a regular occurence, but it definitely is a good breakfast option.

PS: my brother told me to microwave the butter for 10s next time. That way, it will be partially melted and much easier to mix.
